Her famous Father (at least in my world) Victor Kampas, who immigrated from Greece at the age 17 and built his iconic Knoxville businesses, Varsity Inn, Kampas Liquor and Vic’s Lake View Market & Deli. (Be Good to Your Belly, Eat at Vic’s Deli) The best hot dogs (as close to Smoky Mountain Market as you’ll get) but I digress. her Mom Rebecca is a great conversationalist (we talked at Betsy’s kick-off) is from South Knox County. Betsy grew up in Saint George Greek Orthodox Church. The Henderson family attend and are active in Farragut Presbyterian, where Betsy is an elder.
